Gooey Peppermint S’mores Cookies – Holiday Cookies You Will LOVE!
You are going to love these gooey Peppermint S’mores Cookies! Holiday Cookies You Will LOVE consist of these and they are really good! I got this recipe from a friend and the ingredients are to die for! If you are like me a frugal gift idea for your family and friends is to spend a week baking a big batch of cookies each day and creating a cookie tray! It is practical and the thought that goes in each one is awesome! Plus, you save on a hostess gift!
Peppermint Cookie
Ingredients:
1/2 C unsalted butter, room temp
1 bag of Ghirardelli chocolate wafers
1 tsp. peppermint oil
1½ C flour
¼ C unsweetened cocoa powder
1½ tsp baking powder
¼ tsp salt
1¼ C brown sugar
3 eggs, at room temperature
1½ tsp vanilla
1 bag of square marshmallows
Directions:
-Preheat oven to 350 degrees. Line cookie sheet with parchment.
-Melt butter and chopped chocolate and peppermint oil in a sauce pan on medium heat. Stir frequently.
-Remove the saucepan with the melted chocolate, peppermint oil from the burner. Set aside to cool for 15 minutes.
-Whisk together the flour, cocoa powder, salt and baking powder in another bowl.
-Using a hand mixer, combine the eggs, brown sugar, and vanilla until smooth.
-Pour the cooled melted chocolate into the egg mixture.
-Divide the dry ingredients in half mixing after each addition. The cookie dough may be thick .
-Cover the dough and put it in the refrigerator to chill for one hour.
-With a small ice cream scoop make the dough into small balls.
-Put the dough balls 2 inches apart on the parchment paper.
-Flatten the tops slightly by using the bottom of a glass.
-Bake at 325 degrees for 12 minutes.
-Cut marshmallows in half, length wise and then put two chocolate wafer into the cut of the marshmallows.
-Remove the cookie from the oven and put the marshmallow on each cookie.
-Put the cookies back into the oven on boil for about 4 minutes until the marshmallows are soft and light brown.
-Remove the cookies from the oven.
-Transfer the cookies to a cooling rack.
-Put chocolate wafers in the microwave, heating the chocolate for 1 minute, stir well. Then repeat steps until the chocolate wafer has completely melted.
-Drizzle the cookie with melted chocolate wafer by dipping a fork into the bowl of melted chocolate. Next shake the fork above the cookie several times to drizzle the chocolate onto the cookie.

Question about this recipe: is there an ingredient missing from the list or are the chocolate wafers divided use? One of the first instructions calls for melting chopped chocolate. If this chopped chocolate is the wafers, how much do you melt in this step?Thanks!
