Homemade Italian Meatballs Recipe

When it comes to cooking a delicious home cooked meal for my family that the kids will love as well, it gets a little tough.  My kids struggle with eating beef but they do love my mom’s homemade Italian meatball recipe is the BEST.  These are authentic meatballs.  As many of you know both of my parents are from Italy.  When I got through the process to make these I always make a lot.  They are some of the easiest foods to freeze.  This recipe makes about 60 meatballs so you have enough for dinner in your pasta, a meatball sandwich for lunch, and if you are like me…I enjoy eating them as my main dish with other sides.  They also make a very yummy tailgating food but you have to bring them already cooked. 🙂

INGREDIENTS:

3 lbs of Ground Beef
2 1/2 cups of breadcrumbs
1 cup of grated parmesan cheese
2 Tbs of Salt
2 Tsp of Garlic Powder
Pepper to Taste
1/8 chopped fresh parsley
4 cloves of minced garlic
12 Eggs
Vegetable Oil and Extra Virgin Olive Oil

STEPS:

  1. In a large mixing bowl you mix the meat, breadcrumbs, cheese, salt, pepper, garlic powder, parsley, and garlic.
  2. Once you have mixed it all together and got a little dirty, you will want to add a dozen eggs and mix them in too (use your hands it is the best way to do it).
  3. Get a large bowl of water to dip your hands and create a ball by rolling the meat mixture with your hands. This should make about 60 meatballs!

  4. Place some vegetable and olive oil in a large pan and fry them on medium/high heat until they are very nice golden brown!

    I also make a huge amount of meatballs and utilize them just like you !!! I make my meatballs exactly the way you do,,,but I only put 1 egg per pound….help me understand why 12 eggs…because I will definately make them your way !
