Italian Rice Balls Recipe: Authentic “Arancini”

Italian Rice Balls Recipe

Here is a recipe that came straight from my mom’s kitchen! Make these Italian Rice Balls for Holidays and even for some football games! They are my favorite appetizers that you can have! They remind me of the Holidays and of course being with family! My mom even made a video for me to share! 🙂

Also, if you are looking for a good Chicken Cutlet recipe, replace this ammuddicata recipe with chicken instead of red meat! 

Italian Rice Balls Recipe

Ingredients:
2 lbs (bag) Cooked, Drained, and Cooled Rice
1 cup bread crumbs
2 eggs
½ c. grated cheese
½ c. mozzarella cheese
salt and pepper
1 ½ lb ground meat
1 chopped onion
½ bag of Frozen Green Peas
2 medium size of tomato paste and a little water
2 beaten eggs
bread crumbs to roll in (about 3 cups)

Rice Mixture:

Mix Rice, bread crumbs, 2 eggs, ½ cup cheese, salt and pepper.

Cook Meat:

Brown onion and then meat in a little oil.
Add tomato paste and a little water.
Let simmer.
Season with salt and pepper. Cool.

Form Rice Balls

Place 2 tbs of cooked rice in the palm of the hand.
Make a well in rice and scoop in the meat mix. This way the meat is in the middle of the rice ball. Then add some Mozzarella cheese.
Mold rice around meat into a ball. Dip balls in beaten eggs and roll in crumbs. Fry in deep hot oil until golden brown on both sides for about 3 minutes. Be sure to keep them separated as you are frying them.

    My mom used to make these too, they were a favorite growing up. Now I make them for my kids.
